hello out there.

At the impossible idea that there is anyone is desires to listen to me babble about the things I like to cook and share with family and friends, and my dealings with life in general- I am writing a blog!  (although I will believe it when I see it)

A little back story:
Right after my son was born.  I had already decided that I wanted to be a mom, whose kid might say to his friends one day, that his mom always made the most kick-ass food ever.   I wasn't exactly a stranger to the kitchen, and my mom is the kind of mom who is the great-in-the-kitchen-mom. But it had been a while since I had spent any length of time in that room.   However, there is a great determination I have about things that I want to get done, and therefore I had a bit of faith in myself.  But not a ton, and sauteing things made me nervous, I had a long way to go.

since I really like to bake- that is where I chose to begin my culinary adventure.  Also usually when children are bragging about there mom's cooking this is almost always the type of food they are bragging about. Perfect!  This was going to easier than I thought...maybe.  I wasn't a total disaster in the kitchen, and really if you paid attention to the recipes it usually worked out pretty good.

The stuff looked good and tasted good, but in my desire to rise above mediocre, I knew I had to reach a little bit higher.  Why?  Because I am a mom, and everything I do has to be just a little more complicated than most, so why should this be any different?  And also mediocre doesn't win any awesome mom cook award.  

Here is the recipe for the banana (bread) cupcakes

ingredients:

1 stick of butter
1 1/2 C sugar
2 eggs
1/4 C Sour cream
2 C flour (sifted)
1 tsp. vanilla
3/4 tsp. baking soda
1/2 tsp.baking powder
1/4 tsp salt
3 fully ripe bananas
1 C nuts (optional)

Preheat the oven to 350 degrees F.

Cream butter, sugar, and eggs in the bowl of the stand mixer.

In a smaller bowl, sift together dry ingredients together.  

Add dry ingredients and sour cream to butter mixture, and mix well.  Add bananas (after a light mash), vanilla, and nuts (if you wish).  

Divide evenly between two loaf pans, or fill cupcake cups 2/3rds full.  The loaves take 1 hour to bake, check the cupcakes/muffins as the time may vary depending on size. 

*I have made this recipe many times by now.  It's really nice and moist, and the kids love it.  (:
